I think this would work well without sm...Hey Dijon. I think this would work well without smoking if you must! I would up the heat to 250F and let it slow-cook, covered for 4-6 hours. I would leave it uncovered for the FIRST and LAST 45 minutes but cover it between. The longer the cook-time the more tender the meat should be, but go too long and it could dry out, even after the brine. I'd just omit any curing salt and reduce brine time depending on the size of your breast. C'mon now, keep it clean! Otherwise it wouldn't be very different from a peppery smoked turkey breast, just a lot better with a flavorful brine and the addition of the coriander seed.
